Ingredients:
1 pack, 180gunMEAT Longganisa, crumbled,reserve some sliced pieces
2 tbsp olive oil
1 wholegarlic, minced
1 tspthyme
1 pc bay leaf
1 whole onion, diced
4 pcswhole tomatoes, diced
1 pc, small carrots, small diced
1 tsptomato paste
½ tin, 400gtomatoes, chunks
1 tsp sugar
1 cupvegetable stock
To taste salt and black pepper
3 tbsp fresh basil, sliced
½ cup UnCheese, grated
200g uncooked spaghetti, cooked according to package directions
How To:
1.In a pan, heat olive oil. Sauté onion, garlic, thyme, bay leaf, tomatoes and carrots.
2.Add the tomato paste and sauté until the paste turns orange in color. Add the crushed unMEAT Longganisa and sauté for another 2-3 minutes.
3.Add the canned tomatoes, vegetable stock and sugar. Simmer uncovered on low heat for at least 30 minutes. Stir occasionally. Toss in the reserved unMEAT Longganisa slices. Season with salt and black pepper to taste.
4.Serve on top of cooked spaghetti, grated UnCheese and shredded fresh basil on top.
